I tried something new for dinner.
2 slides sourdough bread, with good Pasta Plus brand (a local one) pesto spread on each. Then 1/4" thick slices of chevre (goat cheese) put on each.
I put it in the toaster oven on broil, and while the cheese didn't brown like I was expecting it was still rather good. The cheese got nice and warm and soft(er), and the bread got all crispy around the edges. Next time I'm not going to put it on a pan. Cheddar melts and runs, but the goat cheese didn't. It was really rather interesting to see the differences in how the cheese behaved from what I'm used to.
It was quick & easy too, so I'm definitely going to have to remember it for future meals.
